Zucchini snack cake, recipe
If the zucchini fritters are already quite full - do not fry them anymore. Prepare this snack cake - with vegetable filling and spicy sauce.
Ingredient:
zucchini - 1.2 kg;
carrots - 2 pcs.;
onion - 2 pcs.;
oil - to taste;
salt - to taste;
garlic - 2-3 cloves;
greens - 1/2 bunch;
sour cream - 300 g;
tomatoes - 4 pcs.;
eggs - 3 pcs.;
flour - 4-5 tbsp. l.
Grate carrots on a coarse grater, chop onions and fry in oil until golden brown. Add salt. Mix sour cream, crushed garlic and chopped greens. Cut the tomatoes into thin slices.
Grate zucchini on a coarse grater, add salt, leave for 15 minutes and squeeze. Beat the eggs with salt, add to the zucchini. Pour the flour there, mix.
Put a portion of the dough on a heated pan and flatten it. Fry on both sides until brown. Fry all the dough in the same way. Let the cakes cool.
Assemble the cake: put the cake on a plate, spread the sauce, add fried vegetables and tomato slices, salt. Cover with the second cake and repeat until you run out of cakes. Put the cake in the refrigerator for 1 hour, sprinkle with greens and decorate with a tomato before serving.
