Zucchini muffins recipe

 



Zucchini dishes in the oven are not only salty. For example, you can make sweet cupcakes from zucchini. Only you will know what is inside.


Ingredients:


zucchini - 190 g;

oil - 120 ml;

sugar - 150 g;

eggs - 2 pcs.;

vanilla sugar - 1 tbsp. L.;

milk - 2 tbsp. L.;

flour - 220 g;

baking powder - 1 tsp;

soda - 1/2 teaspoon;

salt - 1/2 teaspoon;

cinnamon - 1 teaspoon;

nutmeg - a pinch.



Preheat the oven to 220°C.


Grate the zucchini. Mix the dry ingredients: flour, baking powder, baking soda, salt, cinnamon and nutmeg. Beat butter with sugar, vanilla sugar, eggs and milk. Add zucchini pulp, mix. Add the liquid ingredients to the dry ingredients, mix again.


Spread the dough on the forms to 2/3 of the height - metal forms must be lined with paper ones. Bake the zucchini muffins for 5 minutes, reduce the temperature to 180°C and cook for another 15 minutes.
