Spicy pumpkin soup with chicken and rice

 


Pumpkin pulp - 300 g.

Boiled chicken or turkey - 500 g.

Onion - 1 pc.

Garlic - 2 cloves.

Carrot - 1 pc.

Ginger - 30 g.

Olive oil - 1 tbsp. l.

Tomato paste - 1 tbsp. l.

Curry seasoning - 1 tbsp. l.

Tomatoes - 400 g.

Chicken broth - 750 ml.

Rice - 300 g.

Salt, pepper, cilantro to taste.


Finely chop the onion and garlic, cut the carrot into circles, and the pumpkin into small cubes. Grate the ginger on a fine grater. Heat olive oil in a deep pan. Fry onions, garlic, carrots and ginger until golden brown.


Add pumpkin, tomato paste, curry and pieces of chicken to the pan. Fry for another couple of minutes. Then add chopped tomatoes, salt, pepper and hot broth. Cook for 15 minutes. Then add the rice and cook the soup until the rice is ready (about 20 minutes). If you want a thinner soup, take less rice. Before serving, sprinkle the rice with chopped cilantro.
