Solyanka with potatoes, mushrooms and fresh cabbage, recipe
Try a version of this soup with potatoes. Instead of sauerkraut, put fresh, adding pickled cucumbers and pickled cucumber.
Ingredients:
Potatoes - 3-4 pcs.
Carrot - 1 pc.
Fresh mushrooms - 300-400 g
Pickled cucumbers - 2-3 pcs.
Fresh cabbage - 250 g
Cucumber brine - 5-6 tbsp. l.
Onion - 1 pc.
Oil - 3 tbsp. l.
Flour - 1 tbsp. l.
Tomato paste - 2 tbsp. l.
Water - 2 l
Olives - 100 g
Bay leaf - 2 pcs.
Salt - to taste
Ground black pepper - to taste
Lemon - 1/2 piece
Parsley or dill - to taste
Cut potatoes into small cubes, carrots and mushrooms into strips, finely chop onions and cucumbers. Fry onions and carrots. Add the flour, mix and cook for 1 minute. Dilute the tomato paste in 100 ml of hot water, add to the onion and carrot, mix and simmer for 2 minutes. Fry the mushrooms over high heat. Bring the water to a boil, put the potatoes, cook for 7-8 minutes. Add mushrooms, roast, cabbage, cucumbers, pickled cucumber, olives and bay leaf. Salt and pepper. Boil the brine for another 10 minutes. At the end, add lemon slices and chopped greens.
