Rich soup - recipe from salmon
Ingredients:
Salmon head, fins and tail - 600 g
Salmon fillet - 400 g
Onions - 2 pcs. 100 g each
Carrot - 2 pcs. 100 g each
Potatoes - 300 g
Salt - 1 tbsp. l.
Black pepper with peas - 10 pcs.
Ground black pepper - 1/2 tsp.
Dill greens - 3 g
Parsley greens - 3 g
Bay leaf - 2 pcs.
Vodka - 50 ml
Water - 2.3 l
In order to get a delicious soup - a simple recipe must be used exactly according to the technology. Start by washing the fish and removing the gills and scales. Put the fish in a pan, pour water and put it on the fire. Constantly removing the foam, add onion and carrot, cut into four parts, to the broth. Close the pan with a lid and cook the broth for 1 hour.
Remove the fish, remove the bones, and discard the vegetables. Peel the potatoes, cut them into cubes, do the same with carrots and onions. Chop the greens. Strain the broth through a sieve or cheesecloth, put the vegetables in the purified liquid. Add a bay leaf, peppercorns, cook for 15 minutes, not forgetting to add salt. Then lay out boneless fish, ground pepper and pour vodka. Add dill and parsley, turn off the heat, cover and leave to infuse for 10-15 minutes.
