Puree pea soup with crackers

 



Peas are a rather specific cereal that not everyone likes in soup. We offer you to prepare a fragrant and rich pea soup, which even children will be happy to eat. Boiled peas give the dish a silky texture. The tender soup will be well complemented by the crunchy croutons.


You can cook it on chicken broth, or on vegetable broth in a lean version. Use bottled water for soup so that the peas are well boiled.


Ingredients:


chicken - 250 g;

water - 2 l;

dried peas - 200 g;

potatoes - 300 ml;

onion - 1 pc.;

carrot - 1 pc.;

sunflower oil - 3 tbsp. L.;

bread - 5 slices;

greens for decoration;

hop-suneli seasoning - 1 tbsp. L.;

salt, ground pepper to taste.


Boil the broth from any parts of the chicken for 40-60 minutes on low heat, skimming off the foam. Pull the meat out and leave to cool. Cut the meat into small pieces. Wash the peas several times and soak for 5-6 hours. Soaked groats are better boiled in soup.


Cut the bread slices into cubes and put them in a bag. Add a teaspoon of salt and a tablespoon of suneli hops. Tie the bag and shake several times so that the croutons are covered with spices. Then untie the ball again, pour a spoonful of sunflower oil and shake the bread again. Put the prepared cubes on a baking sheet or on a hot, dry pan, and cook for 10-50 minutes in the oven or on the stove.


Chop the onion and carrot arbitrarily. Fry the vegetables until ready in a pan with heated sunflower oil for about 4-5 minutes. Put the peas in the hot chicken broth and cook until ready. The time of cooking peas takes 30-60 minutes, depending on the variety.


Add potatoes to the pot with broth and peas, and cook for another 15 minutes. Then put the fried vegetables, salt and spices in the soup, cook everything together for another 5 minutes and turn off the heat.


To prepare the puree, dip the blender into the hot soup and blend everything until smooth at low speed. If desired, you can pour cream into the dish or add grated cheese.


Pour the ready hot puree soup on plates and put pieces of chicken in it. Sprinkle with chopped greens. Serve homemade croutons with the soup.
