Lean brine soup, recipe

 



The taste of this soup is as delicate and sour-salty as that of the classic pickle. But this soup is without meat. For cooking you will need:


potatoes - 4 pcs.;

carrot - 1 pc.;

rice - 3 tbsp. L.;

onion - 1 pc.;

pickled cucumbers - 3 pcs.;

water - 2 l;

brine - 1/2 l;

tomato paste - 3 tbsp. L.;

Bay leaf;

oil - 3 tbsp. L.;

salt - to taste;

ground black pepper - to taste;

parsley - a bunch.

Boil water, add salt, add washed rice and boil for 5 minutes. Add potato cubes. Chop the onion, grate the carrot on a coarse grater. Put half of the onion and carrot in the soup, fry the other half in oil. Add cucumbers cut into strips and tomato paste there, stew for 5 minutes. When the potatoes are ready, add the frying. Cook for another 5 minutes on low heat. At the end, add brine, bay leaf, ground black pepper and greens. Add salt to taste and remove from heat.
