Delicious soup with meatballs and vermicelli
Soup with meatballs will appeal to both adults and children. This soup is prepared very quickly, because it does not need to cook the broth in advance. If desired, you can add any cereal or a mixture of frozen vegetables to this soup. You can experiment with the meatballs themselves. Try using different types of meat, minced fish or even grated cheese for cheese meatballs.
You can take any kind of meat for meatballs, but it is preferable that it be without fat and veins. With chicken, the soup will be more dietary. It is better to take water not from the tap, but bottled. If you are preparing soup for a child, it is better to boil the vegetables instead of frying them.
Ingredients:
Meat or minced meat - 400 g.
Potatoes - 2 pcs.
Carrot - 1 pc.
Large onion - 1 pc.
Eggs - 1 pc.
Vermicelli - 50 g.
Water - 2 l.
Sunflower oil - 20 g.
Salt, spices to taste.
Greens are fresh - a small bunch.
Roll the meat through a meat grinder with a fine grate. If you took ready-made minced meat, then this step can be skipped. Finely chop half of the onion or pass it through a meat grinder, add it to the minced meat. Beat the egg, spices for meat into the minced meat, mix until smooth. With wet hands, shape meatballs the size of a walnut from the minced meat. If the balls fall apart, you can add a little semolina.
To prevent the meatballs from being cooked and falling apart in the soup, as well as from being hard, one trick is used. Put a saucepan with a stove on the fire and bring to a boil. Immerse meatballs in boiling water and cook for 10 minutes. In the process of cooking, remove the foam. Then pull out the meatballs and set them aside - they will be needed later.
Peel the potatoes and finely chop them. Drop the sliced potatoes into the boiling water where the meatballs were cooked. Boil for 10 minutes. Finely chop the second half of the onion and grate the carrot. Heat sunflower oil in a pan and fry onions and carrots for 5-7 minutes.
Add frying and vermicelli to the soup, cook for another 5 minutes. Then put the meatballs in the soup and cook for another 5 (for chicken) or 10 (other meat) minutes. Finely chop the greens, add to the soup and immediately turn off the heat. Salt and season the dish to taste and pour it on plates.
