Classic nettle soup with chicken
Nettle contains a huge amount of useful substances - nutritionists say that ascorbic acid is more in it than in black currant berries. In addition, the plant contains vitamins B and A, which means that by regularly using nettle, you can improve metabolism, skin condition, improve vision and strengthen immunity.
UNIAN found out when you can use nettles for soup and how to cook the first dish so that it is tasty.
IMPORTANT: if you need to prepare nettle soup with meat, then it is better to collect the plant for it from May to July, at the same time, not to pluck the entire bush, but only its top. It is there that the concentration of useful substances is the highest.
Classic nettle soup with chicken
For cooking you will need:
two chicken legs;
a bunch of nettles;
three potatoes;
one onion;
one carrot;
three boiled eggs;
bunch of dill;
salt.
When preparing nettle soup with chicken, do not forget to boil the broth. To do this, put the drumsticks in a saucepan, cover with water and put on a slow fire. At the same time, put on gloves and wash the nettle thoroughly to remove sand, dirt and insects. Move it to a deep plate and cover with boiling water, leaving the plant in the hot liquid for 2-5 minutes. Such a simple procedure will help to remove burning and bitterness from nettle.
After this time, drain the boiling water, squeeze the plant with your hands, removing excess liquid, and finely chop. Do the same with dill. Remove excess foam from the broth with a slotted spoon, reduce the heat and cook the broth for 30-40 minutes under the lid. Peel the onion, potato and carrot, cut into cubes of the appropriate size. Chop the boiled eggs as well.
When the broth boils, add potatoes to it, and after two minutes, carrots and onions, then cover with a lid and leave for 15 minutes. In the next step, add the eggs, wait for boiling, put greens in the pan, wait for boiling again and turn off the heat. Cover with a lid, let the dish infuse for 10 minutes, and then serve the nettle soup with an egg to the table.
