Chicken soup with dumplings, recipe
If you are tired of ordinary soups, prepare chicken soup with dumplings in the form of rolls. Don't be scared by the word "rolls" - this soup is easier to prepare than with homemade noodles.
For cooking you will need:
water - 1.8 l;
chicken (thighs or any other part) - 350 g;
potatoes - 350 g;
carrots - 100 g;
onion - 100 g;
oil - 2 tbsp. L.;
salt - to taste;
ground black pepper - to taste;
bay leaf - 1 pc.;
dill (fresh or frozen) - 10 g.
For dumplings:
flour - 100 g;
egg - 1 pc.;
salt - 1/3 teaspoon;
oil - 1 tbsp. l. + 2 tsp;
water - 1 tbsp. L.;
garlic - 2 cloves;
dried Italian herbs - 1 tsp.
Pour water over the thighs, add salt, bring to a boil, remove the foam. Cover with a lid and cook on low heat for 40 minutes. Remove the meat from the broth, separate it from the bones, and cut it into small pieces. Add peeled and cut into small pieces of potatoes to the pot, cook for 10 minutes. Cut the onion into cubes, grate the carrot on a coarse grater, fry the onion and carrot in oil until golden.
Prepare the dough for dumplings. Mix the egg and salt, add 1 tbsp. l. oil and water. Mix and gradually add flour. Knead a soft elastic dough. Form a ball, cover with a film, leave for 10-15 minutes. Pass the garlic through a press, add 2 tsp. oil, Italian herbs, mix. Roll out the dough into a thin rectangular layer - 2 mm thick. Grease the surface of the dough with a mixture of garlic, butter and spices (not reaching the edge of 1 cm) and wrap it in a tight roll. Cut the roll into slices 0.5 cm thick.
Put meat and onion with carrots in a pan, add ground black pepper, add salt to taste. Let the soup boil and put dumplings-rollets. Stir and cook on low heat for another 7-10 minutes.
