Cheese soup with mushrooms - recipe
For cooking you will need:
Dry mushrooms - 50 g.
Onion-1 pc.
Carrot - 1 pc.
Green onion - 50-60 g.
Vegetable oil - 2 tbsp. l.
Processed cheese - 4 pcs.
Wash the dried mushrooms well and put them in a 3-liter saucepan. Peel the onion, cut it into two halves. Pour cold water over the mushrooms and onions, bring to a boil and cook for 2-2.5 hours over medium heat. Cut the carrot into circles and fry. At the end of frying, sprinkle with finely chopped green onions.
Strain the broth and bring it to a boil again, add salt. Chop the mushrooms and put them in a pan. Add potatoes cut into small cubes (up to 1.5 cm) and fried carrots with green onions. 10 minutes before the end of cooking, add melted cheese - cut into cubes or grated. Knead until the cheese is evenly distributed. Soup with mushrooms and processed cheese is served hot, it can be decorated with a small amount of green parsley or chopped green onions.
Take into account: so that the mushrooms are not cooked for so long, they can be soaked in cold water for several hours in advance. Then they will need to be boiled for about half an hour in the same water (without salt).
